Spinach Quiche to Go with Turkey Bacon

5 oz baby spinach2 1/2 t olive oil1/2 t ground nutmeg3 slices turkey bacon1/2 cup shredded cheddar cheese (not lowfat)1/4 chopped red onion6 large eggs, beaten6 Reynolds Baking Cups set on a cookie sheet (no need for muffin tins!)
Preheat oven to 350.
Saute spinach in 1 t olive oil, then sprinkle with nutmeg. Meanwhile, put turkey bacon and microwave and heat for three minutes. Remove and chop. Use remaining olive oil to grease baking cups (or spray them--I didn't have any). Combine everything into a 4-cup measuring cup, mix well. Pour evenly into baking cups. Bake for 23 minutes.
