Spinach Fritatta with Creole Sauce

Sauce1 large tomato coarsely chopped1/2 large onion chopped2 tbsp chopped celery1/4 tsp of paprika1/8 tsp of pepper1/8 tsp of red pepper sauceFritatta2 tbsp margarine1/2 large onion3 cups chopped spinach3 large eggs6 tbsp of egg substitute (3 egg equivalent)1/8 tsp of thyme1/8 tsp of salt1/8 tsp of pepper30 grams of low fat mozz cheese
To make sauce toss all ingredients into a saucepan and cook. Set aside and keep warm.
For Fritatta, fry onion in margarine and then add spinach until wilted. Spread evenly in the pan and pour eggs over top. Cover and cook on a lower setting until eggs set.
Sprinkle with cheese.
Cut into 4 servings and pour sauce over and serve!
