Meatless Fried Rice

2 cups cooked brown rice 1T seasame oil 2 stalks celery chopped 1/2 of a red bell pepper chopped 1/2 of a green bell pepper chopped 1/2 cup of shelled thawed Edamame 1/2 cup of snap peas - cut in 1/2 1 t grated ginger root 1t onion powder 1T minced garlic 1T seasame oil 1 egg 1/2 cup firm tofu chopped in small pieces 1T chives
Use pre-cooked cold brown rice if possible.
Using a large non-stick fry pan.....
Saute the garlic, ginger and spices in the seasame oil until tender.
Chop all the vegies and place into fry pan.
Stir fry until vegies are at desired tenderness (shouldn't bee more than 5 - 7 min on med heat)
Add pre cooked rice and soy sauce
When rice is heated thru make a opening in the middle and place the egg. Allow the egg to cook thoroughly then mix into the rice / vegies.
Add tofu and keep on the heat long enough for it to heat.
Sprinkle with chives
