Quick and light for dinnertime! Quick and light for dinnertime!
Number of Servings: 2

Ingredients

    1 tsp minced garlic
    Shrimp, peeled 75 g
    Firm tofu, diced 100g
    Red bell peppers, chopped, 1/2 cup
    1 large carrot, peeled and chopped
    1 tbsp Hoisin sauce
    1 tbsp Oyster sauce
    2 tsp olive or sesame oil


Directions

Stir fry garlic and shrimp for 2 minutes in the oil; remove from pan. Sir fry tofu, red bell pepper, and carrots 4-5 minutes or until tofu is slightly browned and carrots begin to soften. Add garlic shrimp, 1 tbsp Hoisin sauce and 1 tbsp Oyster sauce. Stir fry for 1 minute.

Serve with whole grain rice and soy sauce.

    I really enjoyed this! In fact, it was so good that I had to eat both portions. I made it with two ounces of Soba noodles instead of rice. I imagine this would really taste fantastic with broccoli. - 3/6/11

    This was quite tasty. I think I would use a yellow pepper next time I make it, as I think the colors would be much more attractive. The red pepper was way too close in color to the carrots. I served it over brown Basmati rice and lite soy sauce. Good recipe for tofu. Thanks for sharing. - 7/26/10
