2 cups lentils4 cups water5 cups vegetable broth2 onions diced(add other vegetables as you like)parsley, oregano, salt, cumin28 ounce can diced tomatoes (with juice)
Place all ingredients in crockpot and cook on low for 8 to 10 hours

I made many additions of vegetables (onions, mushroom, carrots, sweet potatoes, zucchini, potatoes -- all chopped finely). I also used soup powder for salt and flavor. I only had one cup of lentils, but the soup was amazing. Browned onions first, in the crockpot overnight and had it for lunch. - 12/4/11
