stuffed zuchinni boats

Ingredients
1 lb ground beef 7% fat1 small can tomato sauce1 can of water3 plum tomatos seeded and diced8 oz pack mushrooms chopped1 meduim onion chopped fine1/2 cup minute ricesalt and pepper to tasteoregano & thyme to taste
Directions
preheat oven 400
split zuchini in 1/2 and remove inside spray with cooking spray and precook a little while cooking meat mixture

saute onion and mushroom using cooking spray to coat pan add ground beef continue cooking when most pink is gone add tomatoes and spices add tomato sauce and water stir add rice continue to cook on med to low heat until thickened taste for correct seasoning remove from heat and add 1/4 cup parmesan cheese

take zuchinni out of oven and fill sprinkle with remaining cheese bake for 30 minutes

serves 2 1/2s per person

    I will definitely make this again. I altered the recipe by adding a can of mushrooms, minced garlic, salt, pepper, and oregano while browning the beef. I topped each boat with a provolone slice. - 7/2/11
