Chicken Breasts with Creamy Mushroom Mustard Sauce

4 bonless, skinless chicken breast halves (11/4 lbs)1/4 cup white flour1 tsp salt, 1/2 tsp pepper1 Tbsp olive oilSauce:1/2 cup chopped onions1 cup sliced mushrooms3/4 cup fat free chicken broth2 Tbsp coarse-grained Dijon mustard3 Tbsp low fat sour creamS & P
Dredge chicken in flour, salt & pepper. Cook in oil & set aside
Sauce:
In pan, reduce heat to medium, add onions and cook 3 minutes stiring until softened and begins to colour. Add mushrooms until water is cooked off. Add chicken broth, mustard and bring sauce to simmer. Cook 4 minutes or until sauce is reduced and thickened slightly.
Add sour cream and stir just to heat through. Season with salt & pepper. Spoon sauce over chicken.
