Curried Sweet Potato

Ingredients
2 Sweet Potatoes dice these2 Tbsp chopped Shallots or Green Onions2- 3 cloves of Garlic2 Tbsp Olive Oil2 tsp Curry Powder1 tsp Turmeric1/4 tsp Cinnamon1 tsp Cayenne Powder1/2 of a Red Sweet Pepper, chopped1 12-oz can Vegetable/Chicken broth
Directions
Chop up about two sweet potatoes raw, set these aside. Brown garlic, shallots in olive oil. Reduce heat and add spices, stir until fragrant. Add sweet potatoes and vegetable broth simmer until potatoes are tender. May need to add more broth while simmering. Serve with warm brown or white rice.
