Introduction

This dish never fails to delight vegetarians and non-vegetarians alike. This dish never fails to delight vegetarians and non-vegetarians alike.
Number of Servings: 6

Ingredients

    1 rib celery, finely chopped
    1 Tbs olive oil
    1 small bell pepper, finely chopped
    2 carrots, finely chopped
    2 large onions, finely chopped
    3 tomatoes, skinned and chopped
    1 Tbs lemon juice
    1 large apple, cored and chopped
    2 Tbs brown sugar
    2 tsp turmeric
    2 Tbs shredded coconut
    1 Tbs curry powder
    2 Tbs whole wheat flour
    10 oz vegetable stock (1 vegetarian boullion cube + 10 oz water)
    1/4 Cup golden raisins
    1 oz (or 2 Tbs) peanuts
    salt and pepper to taste

Directions

1. Place oil, pepper, carrots and celery in a dutch oven, cover and cook on medium heat for 5-7 minutes.
2. Stir in onions, tomatoes, lemon juice, apple, sugar, curry powder, turmeric and coconut.
3. Cover and let cook for ten minutes, stirring halfway through cooking.
4. Stir in flour, hot stock, raisins, peanuts, salt and pepper. Cover and cook for another five minutes.

Serve with brown rice.

    Incredible!
    Made this tonight and all the time I was cooking it I wasn't convinced it would work but it was delicious, left out raisins due to daughter hating them and peanuts as they were the only ingredient I would have had to buy specially but I will definitely be making this again - loved it. - 4/30/12

    Incredible!
    Really tasty! We like it even better than our usual vegetarian curry. Left out the coconut since we didn't have any but still excellent! - 7/23/08
