Shannon's Butter Beans

Ingredients
1 lb frozen butter beans, thawed or 1lb dried, soaked2 carrots, chopped2 stalks celery, chopped1 large onion, chopped3 slices fakin bakin1 bay leaf4 T. olive oilsalt and pepper
Directions
Saute carrots, celery and onion in olive oil in large dutch oven. Add beans and bay leaf. Fry fakin bakin in cast iron skillet in a little canola oil. Chop and add to pot. Simmer 30 min and season with salt and pepper.

    I loved Lima Beans as a kid, these are sooooo much better. Great additional flavor from the fakin bacon and veggies. For a vegetarian this is a meal. - 10/26/11
