Chicken Stroganoff

1/2 lb Boneless/Skinless Chicken Breast3 tbs Light Sour Cream1 cup Chicken Broth2 tbs Wondra flour1 tbs canola oil2 cups frozen broccoli1 cup sliced red onion
Brown chicken in a large skillet, cube and set aside and also boil 6 oz of dry pasta until al dente' and set aside
In the same pan you cooked the chicken in, pour the tbs of canola oil in and caramelize the onions.
Sprinkle the Wondra flour on the onions and stir well
Add the cup of chicken stock (Or more if it doesn't seem liquidy enough)
Once the sauce is thickened a little bit, add the cubed up chicken and broccoli and let simmer until chicken is cooked through and broccoli is soft. Toss cooked pasta in with the sauce and season to taste.
I like to add red pepper flakes for a bit of heat.
Makes 4 servings.
