Lentil Soup

Ingredients
1 Tbsp olive oil1 onion, chopped2-3 cloves garlic, minced2 cups dried lentils, washed1 carrot1 bay leaf2 cups of water or vegetable stock2 tsp salt (preferably sea salt) or to tastepepper to taste
Directions
Heat the oil in a large soup pot and add onions. cook until they soften about 3-5 minutes. Add spices and cook a minute longer. Add water or stock. Stir in the lentils, carrot, and bay leaf. Bring to a boil and simmer 30 minutes to an hour and a half. Remove bay leaf and serve. Serves 4
