Vegan Mushroom Enchiladas

5 flour tortillas Can of Enchilada sauce (I used Ortega-mild)1/4 cup of your brand of vegan cheeseGarlic powder- to taste1 medium sized onion- sliced1/2 cup of sliced cherry tomatoes5-10 chopped mushrooms
1. Pre-heat oven for 350-400
2. Sautee mushrooms and onion with your choice of very light cooking oil until they are tender.
3. Place tortillas in greased or lined cooking pan
4. Use a spoon to pour enchilada sauce on the inside of the tortillas and then add mushrooms and onions evenly between the five tortillas
5. Carefully roll the tortillas and top with garlic and vegan cheese
6. Place in oven and cook until shell is golden brown and cheese is melted.
