Ingredients
Carrots, onions, sweet potatoes, red potatoes, parsnips, squash, other roastable veggies as desired
Directions
Makes about 4 servings - if eaten as a main course. Cut up all the veggies in about 2 inch cubes. Place in bowl and toss with olive oil, also season - can use salt and pepper, garlic, chili powder or red pepper flakes, etc.
