Slow Cooker Pinto Beans w/ Smoked Ham Hocks

-4 C. dry pinto beans-1.25lb or 2 smoked ham hocks-1 medium onion diced-1.75 C. diced celery-1 to 2 cloves minced garlic-8 C. waterOptional:-ground black pepper (to taste)-1 tsp. liquid smoke-2 tsp. Lawry's garlic salt- sliced peperoncini's &/or juice to tase
Place all ingredients into large slow cooker. Cook on high for 6 hours (stirring occasionally if you are around) or until ham hocks come apart. Remove skin, bones, & visible fat from ham and discard. Serve hot. Great leftover.
Makes approx. ten 1 cup servings.
Note: Fat & calories may vary slightly as much of the ham hock is removed after cooking, leaving only the leaner bits of meat.

this was very good, I used half pinto beans & half navy beans. Also substituted a bag of Kroger Recipe Beginnings Mirepoix Blend (onion, green pepper & celery) for the fresh onion & celery. One thing tough - it makes way more than 10 1-cup servings! I'd say it was closer to 15-20 1-cup servings! - 10/29/11
