1 Tbsp canola oil2 medium onions, chopped4 cloves garlic, choppedI Tbsp fresh ginger, grated1 Tbsp curry powderSalt to taste1 can chickpeas (garbanzos), drained and rinsed1 cup water3 medium carrots, peeled and diced1 cup fresh or frozen spinach4 whole wheat tortillas
Warm the oil in a saucepan or dutch oven.
Add the onions and increase heat. Cook onions and stir over heat until soft and slightly golden.
Add garlic and ginger. Stir to prevent burning.
Add curry powder and stir to mix.
Add rinsed, drained chickpeas, carrots, and water.
Bring to boil, then reduce heat to simmer. Cover and cook for about 1/2 hour, until mushy and fragant.
Add spinach. Cover and cook for about 10 minutes more.
Allow channa to cool slightly before dividing among four whole wheat tortillas.
Fold and eat as for a burrito.
