Alexandrian Cabbage Salad

Ingredients
1 large head of cabbage, finely shredded1 sweet red bell pepper, finely sliced1 green bell pepper, finely sliced3 stalks celery, finely sliced3 carrots, julienned1 tsp citric acid OR1 fresh lemon, juice only
Directions
Slice or julienne all the vegetables using mandolin or food processor. Put in the largest bowl you have. Sprinkle with salt and knead to soften the fibres until it begins to wilt a little and reduce in volume. Add citric acid or lemon juice, mix thoroughly. Store in large tupperware container in the fridge.
