Garlic Lime Penne Chicken

Ingredients
1 1/2 pounds chicken breast cut up (precooked weight)2 T low fat Italian dressing1/2 lime juiced2 cloves of garlicdash of season salt2 cups Hunts Traditional Spaghetti sauce2 cups zucchini diced6 1/2 oz dry Whole Wheat penne pasta (1/2 small box)2 T Parmesan cheesechicken broth optional
Directions
Cut up chicken breasts in bite size pieces. Marinate at least 2 hours in 2 T of low fat Italian Dressing, 1/2 lime juiced, 2 cloves of garlic and dash of season salt.

Cook pasta per instructions. After marinated, pan fry chicken on medium heat in water or broth (optional) until done. I use water. Add zucchini, cook until tender/crisp. Add in 2 cups spaghetti sauce and heat through. Serve over cooked pasta. Top with 1/2 T of parmesan cheese. I used regular, but low fat could be used.

    This is very good! I doubled the marinade and let it work for about 4 hours. We then used 1 1/2 times the rest of the ingredients, except chicken. I didn't want left over spaghetti sauce and zucchini. Next time I will try adding mushrooms and julienne carrots. - 10/28/08
