Hearty Cabbage Soup

Ingredients
Cabbage - 1 lg head chopped in big piecesV-8 - 48oz Low sodiumCarrots - 3 lg (bite size pieces)Celery - 1 bunch (lg slices)Scallions - 6-8 lg (lg slices)Green Peppers - 2 lg - (bite size pieces)48oz Diced/Crushed tomatoes - Hunts Water - 6-8 cups enough to cover all veggies2 Beef Bouillon cubes Parsley - @ 1/2 -1 c fresh roughly choppedgarlic - 2 cloves mincedbay leaf - @ 3-4 med - lg leaves
Directions
Chop all veggies. Add to large stock pot or crock pot. Add liquids and herbs. Bring to a boil, reduce heat and let simmer for at least 2 hours, stirring occasionally.
