Applesauce Whole Grain Coffee Cake

Ingredients
Topping:3 T. chopped pecans (or walnuts)1 T. sugar¼ tsp. cinnamon1 C. all-purpose flour2 tsp. baking powder¼ tsp. baking soda¼ tsp. salt½ tsp. cinnamon1-1/2 C. Ezekiel 4:9 cereal, almond or other flavor¼ C. sugar¾ C. unsweetened applesauce¼ C. vegetable oil¼ C. skim milk or fat-free milk1 egg, slightly beaten½ tsp. vanilla extract
Directions
1. Stir together nuts, 1 T. sugar and ¼ tsp. cinnamon for topping & set aside.
2. Mix flour, baking powder, soda, salt and ½ tsp. cinnamon; set aside.
3. In large bowl, mix cereal, sugar, applesauce, oil, milk, egg and vanilla. Add the flour mixture and stir until thoroughly combined. Spread batter in lightly greased 8x8x2-inch baking pan. Sprinkle with reserved topping.
4. Bake in 375 degree F. oven about 28 minutes or until wooden pick inserted near center comes out clean. Cut into 9 squares. Best served warm.
