Zucchini Goat Cheese Lasagna

1/2 box Barilla no-boil lasagna 2 onions, chopped or grated2 med zucchini (i used trombolini), grated4 Tbs fresh Basil, chopped2 cloves garlic, chopped2 Eggs100g Shredded cheese (i used part skim Mozzarella)130g soft goat cheese Tbs Salsa3 tomatoes, sliced
Makes 6 servings
Saute onions, zucchini, garlic
Mix eggs shredded cheese, and 3/4 of the goat cheese
Mix salsa with 1/3 of tomatoes, reserve for topping
Layer lasagna sheets, zucchini mix, cheese mix and sliced tomatoes - I did 3 pasta layers, two each of the Zucc and cheese mixes, 2 layers of tomatoes.
Top with Tomato/Salsa mix and 1/4 of the goat cheese.
Bake covered 50-60mins - broil for about the last 5 minutes to brown cheese.
