Sweet Couscous Salad with Baby Carrots

Ingredients
1/3 cup water3 baby carrots - sliced into thin strips1/4 cup skim milk1/8 cup dry couscous1 tsp. Shedd Spread1 tsp. Stevia or your favorite sweetener2 tsp. honeydash of salt
Directions
Put water and carrots in a microwave safe bowl. Steam in microwave for 2 to 3 minutes or until desired softness is reached (I like mine slightly crunchy!). Drain carrots and pat dry with a paper towel. Set aside. Pour milk and Shedd spread in a microwave safe bowl. Heat for 1 to 1:15 minutes. Remove and add the Stevia, honey, and salt. Stir until well combined. Pour in couscous and cover. Allow the couscous to rest for 8 to 10 minutes.

Feel free to add your own flavoring and spices! Serve this warm or cover and refrigerate for a cold treat.
