Punky Oatmeal Drops

Ingredients
1 cup canned pumpkin (100% pure, not pie filling)1 cup brown sugar1/2 cup granulated sugar4 egg whites1 tsp almond extract1 1/2 cup wheat flour1 1/2 cup white flour1 tsp baking soda1 tsp cinnamon1/2 tsp salt3 1/2 cups quick oats1 cup dried, sweetened cranberries (craisins)
Directions
Preheat oven to 350 degrees

In medium bowl, combine wheat flour, white flour, baking soda, cinnamon and salt; set aside

In mixing bowl, beat together pumpkin, brown sugar, and white sugar until smooth and creamy. Add egg whites and almond extract; mix well. Slowly add dry ingredients. Remove from mixer and fold in quick oats one cup at a time, then fold in craisins. Drop by heaping teaspoon full onto GREASED cookie sheet. Bake 8 to 10 minutes. Cool one minute on sheet, then move to wire rack.

Makes 4 1/2 dozen cookies
