"Thanksgiving" Soup

1 Leek4 C peeled Pumpkin, cut into 1" cubes2 C diced, cooked turkey breast4 Carrots, diced4 Parsnips, diced1 large sweet potato, peeled and diced5 stalks Celery, diced10 C Vegetable Broth2 C dried Red Lentils1 T Ground Nutmeg1 Tsp Cinnamon1 T Poultry Seasoning1 C roasted Pumpkin Seeds
Put all ingredients (except pumpkin seeds) into large soup pan over medium heat.
Mix well, bring to gentle boil.
Cover, reduce heat and simmer for 45 minutes.
Sprinkle 1/8+ C pumpkin seeds over each serving of soup just prior to serving.
