450 g (1 lb) frozen spinach3 chicken thighs or 1 breast, pre-cooked2 tablespoons ghee1/2 teaspoon caraway seeds4 tablespoons finely sliced onion1 tablespoon curry masala paste2 tablespoons natural yogurt 1 tablespoon garam masalasalt to taste
1. Thaw spinach
2. Heat the ghee in a karahi or wok.
3. stir fry the seeds for 30 seconds.
4. Add the garlic and stir fry for 30 seconds.
5. Add the onions and sir fry for 3 additional minutes adding water to prevent sticking.
6. Add the curry paste &, when simmering, add the spinach.
7. add the chicken and stir fry until it is hot.
8. add the yogurt and garam masala, and salt to taste.
