Panzanella

Ingredients
3 slices Italian bread (Tuscan unsalted), dried out2 cups Water (or sufficient to cover bread)1/2 medium tomato, diced1 small cucumber, peeled and diced1/4 cup purple onion, diced10 basil leaves, coarsly chopped2 Tbs. olive oil2 Tbs. Cider vinegar1/2 tsp. Salt (or to taste)1/8 tsp. Pepper (or to taste)
Directions
Let bread dry out (eg day-old bread). Cover bread with water in a bowl and soak overnight or several hours until thoroughly saturated. Squeeze water out through sieve or strainer. Toss with other ingredients. Serve chilled and garnish with sprig of basil.

This is a traditional Tuscan summertime salad. Fresh and filling, a couple of servings can be a meal in itself.

    I made this last night except I added olives, red onions (guessing this may be the same as purple onion?), skipped the water and added grilled salmon on top. I also used red wine vinegar instead of cider vinegar. - 8/24/10
