Ingredients

    One whole cucumber not peeled, sliced
    one ripe tomato cut in wedges
    one half of red onion sliced
    2 tablespoons of light Italian dressing


Directions

Slice cucumber with peeling still on
Cut tomato in wedges
Slice red onion in thin slices
Mix vegetables and add Italian dressing
salt and pepper optional

Can eat alone or add to sandwiches/pitas for healthy dressing alternative

  • I really wanted to make cucumber salad and glad I went with this recipe. Next time, though, I will cut down on the red onion. While I do love it it really overpowered the other ingredients. - 7/23/08
