Curried Lentil Soup

Ingredients
2 Tbsp peanut oil1 medium onion, choppedsaltpepper1 Tbsp minced garlic1 Tbsp fresh ginger, chopped 3 Tbsp curry powder1 16oz can diced tomatoes1 can coconut milk4 cups chicken or vegetable stock1 cup lentils2 medium russet potatoes, peeled and cut into small chunks
Directions
Put oil in soup pot over medium high heat. When hot, add onion, cooking until translucent. Add the garlic and ginger and cook for another minute. Sprinkle with salt and pepper, then stirr in the curry powder. Cook stirring frequently another minute or two. Stir in the tomatoes and lentils, then stock and coconut milk. Bring to a boil. Partially cover, urn heat down to medium-low. Cook until lentils are tender. (about 15 mins).Stir in potatoes and cook another 15 mins. Add carrots and cook 20 mins or until everything is tender.
