Thick Oatmeal Craisin Cookies

Ingredients
1/2 C. Whole Wheat Flour1/2 C. All Purpose Flour1/2 tsp. Cinnamon1/4 tsp. Nutmeg1/2 tsp. Baking Powder1/4 tsp. Baking Soda1/4 tsp. Kosher Salt1/2 Stick or 1/4 C. Unsalted Butter1/2 C. Unsweetened Applesauce1/2 C. Brown Sugar, packed1 Large Egg1 tsp. Vanilla Extract3/4 C. Rolled Oats2/3 C. Craisins1/2 C. Chopped Walnuts
Directions
Preheat Oven to 350 Degrees - either spray 2 baking sheets with Non-Stick Spray or use Liners.

In a small bowl mix, whisk together flour, cinnamon, baking powder, baking soda, nutmeg and salt. In a mixing bowl, beat butter, applesauce and sugar until smooth. Add egg and vanilla until combined. Turn mixer off and add some flour mixture gradually, while mixing on low, until just combined. Stir in oats, craisins and walnuts.

Chill mix in fridge before cooking to ensure thicker cookies. If you don't do this they will come out more flat. 5-10 mins is fine.

Using a rounded tablespoon, drop cookies onto lined baking sheets about 2 inches apart. Bake 10-12 mins or until edges are brown. Cool on wire rack.

Makes 20 cookies.
