Hummus Wrap

Ingredients
1 ripe roma tomato4 whole grain tortilla wraps1 cup crumbled feta cheese1/2 cup roasted garlic hummus, or your preferred flavor2 cups fresh baby spinachpepper to taste if desired
Directions
Heat the wraps in the oven on low heat, 250 degrees, for about 5 minutes or until warm (or if you're on the go, heat them up in the microwave for about 20-30 seconds each). While the wraps are warming up, rinse the spinach and let dry on a paper towel. Then dice the tomato.

When the wraps are warm, remove from the oven and dress each in the following layers:

spread 2 tablespoons of hummus evenly
1/4 of the diced tomato
1/2 cup of spinach
1/4 cup of feta
sprinkle with freshly ground pepper if desired

Next, wrap the tortilla to your liking, and enjoy! These are great with a side of fresh carrots and fruit. It's a fabulous and light lunch, but also satisfying...even for my husband. :-)
