Ingredients
Directions
-1 cup natural peanut butter (I prefer chunky)-1.5 cup protein powder (chocolate is great!)-1 cup granulated splenda-1/4 cup coconut oil (melted-salt to taste (I used about a 1/4 tblsp)
1. Mix 1 cup peanut butter, 1 cup of protein powder, 1 cup splenda, 1/4 cup coconut oil, and salt.
2. If it is too wet and won't form balls that keep their shape, add a little more protein powder until they are easier to work with.
3. Using a half tblsp, scoop up the dough and roll into balls then roll in remaining protein powder (you can also roll in crushed nuts, unsweetened coconut, unsweetened cocoa powder, etc but note recipe calculations are rolling in protein powder).
4. Place on cookie sheet (I cover with parchment paper for easy cleanup) and place in freezer. Once they harden up, place in a ziplock baggie and keep in freezer.
-they are great frozen or room temperature. About 1g carbs per ball.
