Farmstand Fritatta

Ingredients
Non Stick Cooking Spray 1/2 cup chopped onion 1 medium red bell pepper 1 cup broccoli florets blanched and drained 1 cup unpeeled red potatoes 2 cup egg substitute 1 tablespoon chopped parsley 1/2 teaspoon salt1/4 teaspoon black pepper1/2 cup shredded reduced fat chedder cheese
Directions
1. Spray large nonstick oven proof skillet with cooking spray, heat over medium heat until hot. Add onion and red bell pepper, cook and stir 3 minute or until crip-tender. Add broccoli and red potatoes; cook and stir 1-2 minute till hot.

2. Whisk together egg substitute, salt and black pepper in mediumm bowl. Pour over vegetables. Cover; cook 10 to 12 minutes till egg mixture is set.

3. Meanwhile preheat broiler. Top frittata with cheese. Broil 4 inches from heat 1 minute or until cheese melted. Cut into 4 wedges
