Paleo bread pudding

Ingredients

Muffins for bread3/8 cup of pumpkin puree (or canned pumpkin)1/4 cup of coconut flour1/4 cup of coconut oil (needs to melted before mixing)3 eggs1 teaspoons of vanilla extract1/2 teaspoon of cinnamon1/2 teaspoon of nutmeg1/4 teaspoon of baking powderBread puddingAll of the above muffins, cut into bite sized chunks3 eggs1/2 t vanilla2/3 C coconut milk1 banana1/2 C raisinsFor sauce3 T coconut milk1 T coconut oil1/2 t cinnamon1/4 t cloves1/4 t nutmeg1/4 t ginger1/4 t salt
Mix all muffin ingredients, bake for 12 minutes at 400 degrees
Cut muffins into bite sized pieces
Blend the banana, eggs, coconut milk and vanilla.
Place the muffin chunks and raisins in an oven safe pan with a lid
Pour coconut milk mixture over the bread and stir it well.
Bake at 350 for 25 minutes
SAUCE:
Mix all ingredients in a small sauce pan over low heat.
Heat until well mixed and warmed through.
