Tofu with Peppers

Ingredients
Tofu, firm, 300 grams (remove)Green Peppers (bell peppers), 1.5 cup, strips (remove)Peppers, sweet, red, raw, sliced, 1 cup (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)*Canola Oil, 3 tbsp (remove)Mushrooms, fresh, 2 large (remove)Ginger Root, 15 grams (remove)Garlic, 2 tsp (remove)
Directions
chop onion and fry in hot oil until transluscent. Add ginger,garlic and crushed tomtatoes. Add all spices, add cubed tofu and cook uncovered. Add cubed boiled potatoe and then all the peppers in the end.
