Spaghetti Sauce with Vegetables

Tomatoes 4 mediumGreen Bell Pepper 1 smallGarlic Cloves 3Onion 1 Small choppedGranulated sugar 1 tspParmesan Cheese 5 Tbsp Microplane GratedTomato Paste 30 Grams 1-2 Tbsp for thickeningExtra light olive oil 1 tbspZucchinin 2 cups choppedItalian Seasoning 1 Tbsp
Heat olive oil in fry pan, add onion, cook until transluscent, add garlic, cook about 30 seconds, add remaining ingredients with the exception of zucchini. Simmer stirring often until vegetables are soft. Mash with a potato masher until desired consitancy. Add zucchini and cook until tender. Serve over pasta or over a mixed vegetable medly for an even healthier vegan choice. Vegitarian/Vegan omit cheese.
