Curried tomato & mushrooms

Ingredients
1 medium brown onion2 cloves garlic300g mushrooms (button), quartered3 medium tomatoes, roughly diced2-3 teaspoons curry powder (to taste)1-2 teaspoons ground ginger (to taste)1-2 teaspoons lemon juice (optional)salt & pepper to taste
Directions
Place a little water in pan over high heat. Add onion & garlic and cook until translucent. Add mushrooms and cover pan for 2-3 minutes. Stir. Add tomatoes & spices. Cook for further 2-3 minutes stirring occasionally. At this point the tomato will start to break down. Cook on stove to desired texture. Add salt & pepper to taste.
Makes about 2 3/4 cups.
