Twice baked mexican potatoes

3 large russet potatoes4 oz can diced green chilies3/4 cup shredded cheddar cheese1/2 cup salsa (add to taste)3/4 cup refried beans (vegetarian)
Microwave potatoes in plastic wrap until cooked thru.
Open one side of potatoes (slice a cats eye shape out of the skin.
Remove the insides, set skins aside.
Mix removed potato with all other ingredients.
Scoop mixture back into skins and bake at 350 until hot. (15-20 minutes)
Makes three servings - one potato each.
