Crockpot Fudgy Caramel Pudding Cake

19.8 oz pkg fudge brownie mix1 c water½ c unsweetened applesauce3 T olive oil1 egg1 egg white½ cup fat free caramel sundae syrup2 T chopped walnuts3 c water2 ¾ c vanilla fat free frozen yogurtNonstick spray
Combine first 5 ingredients in a large bowl stir 50 strokes with a wooden spoon. Set aside.
Beat egg white with a mixer at high speed until stiff peaks form. Gently fold egg white into batter. Pour batter into a 2 qt souffle dish or deep sided browned baking dish coated with cooking spray. Drizzle caramel syrup over batter sprinkle with nuts. (caramel will sink to bottom)
Place a long sheet of foil over top of dish wrap edges under dish. Place dish on top of another long sheet of foil. Press foil against sides and over top of dish completely enclosing dish. Place a small rack, trivet, or 3 canning jar rings in a crockpot. Pour 3 cups water into cooker. Place dish on rack. Cover and cook on high for 4 ½ hours or until pudding is set. Remove dish from cooker using oven mitts and remove foil. Let pudding stand 20 minutes. Spoon into parfait glasses or dessert bowls. Top with frozen yogurt.
