Ingredients
1 cup dry mung beans, 4 onz. lite coconut milk, 1 handfull fresh cilantro, two ripe tomatoes, 2 potatoes, cayen pepper, 0.5 jalapeno pepper, turmeric,
Directions
Put mung beans in pot and bring to a boil with 3 cups of water, with 1 tsp cayen pepper poweder and 1 tsp of turmeric powder. lower heat and cook for 20 minutes. Add the cubed potatoes and cook for 15 mins, Add the chopped tomatoes, coconut milk, and chopped jalapeno pepper and cook for 5 to 8 mins. Add the sugar and the cilantro and stir. Serve and add salt to taste.
