Savory Poached Eggs

Ingredients
2 poached eggs (add pepper to taste)1/2 cup of cooked cauliflower2 tablespoons of tomato sauce
Directions
1. Microwave fresh cauliflower to desired texture (or microwave frozen cauliflower as directed on package). Put 1/2 cup of cauliflower on plate.
2. Poach 2 eggs with water and vinegar (standard directions). Pat poached eggs dry with paper towerl or napkin and place on plate with cauliflower.
3. Drizzle approximately 2 tablespoons of warm tomato sauce over the eggs and cauliflower.

This recipe makes one serving. This serves as a light dinner or lunch.
