Vegan Veggies & Rice

Ingredients
-1/2 Cup Rice-1 Cup Water-1/2 Cup Vegetable Broth-1/2 Cup Chopped Bell Peppers-1/4 Cup Chopped Mushrooms-1/4 Cup Chopped Onions
Directions
Boil the water, and then add the rice, and cook for 15 minutes. While the rice is cooking, put the veggies in a pan with the vegetable broth and cook until tender.

Once rice is finished, mix with the veggies, add some spices and salt if you like.

Makes 4 Side dish servings.
