Spicy Peanut Pasta

1 lb. whole wheat pasta1 TB sesame oil6 cloves garlic, minced1 pinch red pepper flakes1 bunch green onions, sliced thin1/2 c. smart balance peanut butter, creamy6 TB rice wine vinegar6 TB soy sauce4 tsp. white sugar1 cucumber, peeled, seeded, and dicedcilantro to taste
Cook pasta. Drain and drizzle with sesame oil. Set aside. Saute garlic and pepper flakes in cooking spray. Add green onions. Turn heat to high and stir for one minute. Remove from heat. Add remaining ingredients and use a wire whisk to thoroughly mix into a thick sauce. Pour over pasta while sauce is warm. Garnish with cucumber and/or cilantro if desired.
