Shrimp Fried Rice

Ingredients
3 cups instant brown rice 3 large eggs1-16oz pkg frozen mixed vegetables9 oz shrimp1/4 cup spring onion2 tbsp soy sauce1 tbsp extra virgin olive oil
Directions
Cook rice and refrigerate at least 1 hr prior to making dish. Add shrimp, spring onion, and thawed vegetables cooking on medium to high heat for 5-10 minutes. Next add rice and soy sauce to pan and stir occasionally for 10 minutes. Spread rice to the outside of the pan creating a hole in the center where you will add oil and eggs. Stir eggs in center until scrambled and then mix all ingredients together. Let stand 2-5 minutes and serve.
