Carrot Bisque (vegan)

Ingredients
* Carrots, raw, 3 cup, chopped * Onions, raw, .5 cup, chopped * *Peanut Oil, 1 tbsp * Garlic, 2 cloves * Curry powder, 1 tbsp * Salt, .5 tsp * Vegetable Broth, 3 cup * *Coconut Milk, 1.5 cup * Maple Syrup, 1 tbsp

in a stockpot over low-medium heat, cook the carrots and onions in the peanut oil for 7-10 minutes, cover and stir occasionally.

add the garlic, curry and salt and pepper. saute for 1 more minute. add the 3 cups of broth, cover and bring to boil. lower the heat and simmer for 10-12 minutes or until carrots are tender.

add the coconut milk and bring to low boil. turn the heat off. use a handheld blender to puree half the soup.. or add it to the food processor and blend.

add back to pot and add the maple syrup.
