Egg Tofu Scramble

Ingredients
6 oz. Lite Extra-firm Mori-Nu Tofu2 eggs &1-2 egg whites1 can Unsalted mushrooms1/4 cup Ham TVP1-2 tsp. Garlic powder1 Tbsp. McKays Chicken Seasoning
Directions
Dice the tofu into a small mixing bowl. Add remaining ingredients except seasonings. Mix well. Spray a large skillet and heat over medium heat. Pour mixture into hot skillet. Cook until brown on one side and then turn and brown on the other side. May serve with toast or a muffin.
