Oatmeal Cookies without eggs reduced fat and reduced sugar

Ingredients
Pumpkin puree, canned, without salt, 1 cup Butter, unsalted, softened 1 cup Granulated Sugar, 1.5 cup Brown Sugar, 1 3/4 cup, packedTofu, silken, soft, 1 cupEnerG Egg Replacer 1 tablespoonVanilla Extract, 2 tsp Baking Soda, 2 tsp Baking Powder, 1 tsp Salt, 1 tsp Flour, white, 4 cup Oats/oatmeal, 5 cup, blended to a fine powder Semisweet chocolate chips, 3 cups
Directions
Cream together wet ingredients including egg replacer, (sugars, butter, tofu, pumpkin, egg replacer and vanilla.

Mix the salt, soda and powder into the flour. Add the flour mixture and the oatmeal incrementally and in and alternating pattern to the creamed sugar mixture.

Add chocolate chips.

Use teaspoons to form a small ball, flatten to desired thickness. Place 1 inch apart on a baking sheet. Cook for 6-10 minutes at 375.
