Ingredients
Broccoli, brussel sprouts, red pepper, mushrooms, carrots, olive oil, basic oven roasted vegetables. . . makes great leftovers
Directions
Preheat oven to 425, spread vegetables on roasting pan, spray with olive oil, place on lower rack in oven, cook until nicely toasted, use good cook's judgement, some will prefer more well done, some less, approximately 20-30 minutes total. Makes enough for one person, can be doubled etc. to make more or to have wonderful leftovers.
