Mel's Kitchen Thick Split Pea Soup

Ingredients
16oz Dried Split Peas1 cup Ham (approximation of amount attached to the ham bone)1 Ham Bone3 medium Carrots (diced)2 Cloves Garlic7 Cups Chicken Broth2 Cups Water1 tsp Pepper1 Cup Peas (frozen)1 Cup Cooked Brown Rice, medium grain3 TBSP's Vegetable Oil (Wesson)1 Large Bay Leaf
Directions
1. In large sauce pan saute the onion & garlic in the oil until soft (5-6min.)
2. Add in broth, dried split peas, water, ham, ham bone & bay leaf.
3. Bring to a boil.
4. Reduce heat to med-low & simmer for about 2 hrs or until soup thickens.
5. Add pepper.
NOTE: Add diced carrots in the last hour of cooking.
6. After 2 hours are up or soup is thick remove ham bone & bay leaf.
NOTE: Soup can be pureed @ this point if desired.
7. Add rice & stir until heated through.
