Carrot Cookies

Ingredients
3/4 cup margarine1/2 cup honey2 egg whites1 tsp vanilla extract2 cups all-purpose flour 2 tsp baking powder1/2 tsp salt1-1/4 cups grated carrots
Directions
Mix the butter and honey.
Add eggs, and beat well.
Blend in vanilla.
In a separate bowl, sift together the flour, baking powder and salt.
Add the wet ingredients and mix well.
Stir in carrots.
Drop the mixture, by teaspoon, on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 15 minutes and cool on racks.

    So, I am seeing add raisins, cinnamon and nuts. Switch out regular flour for whole wheat flour. Switch out margarine for applesauce. And lower the oven temp. Okay...got it! - 5/4/09

    I like the idea but wouldn't use the margerine, substitute some of the white flour with wheat and add cinnamon, ground flax seed and walnuts to make it more flavorful and extra healthy - 7/28/08

    to make it healthier, use applesauce as a substitute for marg. Add cinnamon and nuts too. Make a light glaze of powdered sugar and very little water to add a tad of sweetness. - 4/2/08

    Swap out the margarine with applesauce, swap white flour with whole wheat flour, add cinnamon and nutmeg, add a handful of raisins and maybe agave nectar instead of sugar (directions say if the recipe calls for 1 c sugar, use 3/4 c of the agave nectar as it is a bit sweeter than sugar).
