Vegan Cranberry Walnut Stuffing

Ingredients
1 16 oz. loaf cranberry walnut hearth bread - cut into cubes or small pieces. Slightly stale or toasted in the oven until crunchy/dried.1/8 c. chopped parsley 2 large carrots (200 grams) peeled and sliced thinly1/2 c. chopped onion1 c. vegetable brothSage, thyme, marjoram, salt and pepper to taste
Directions
Place bread, vegetables and herbs into a glass baking pan. Drizzle 1 c. of broth over the ingredients and gently toss to cover.

Place in an oven preheated to 350 and cook until veggies are tender and bread is lightly browned @ 25-30 minutes.
